#TASTYTHURSDAYS: Baja Shrimp Burrito Bowl

As a child of the gulf coast, seafood has always been a big part of my life. Last week I wanted to put a spin on one of my favorite things, burrito bowls, so I came up with this light, summer-time ready version. 

This week, I'm embarking on a 6 week-vegetarian challenge, so if you're in my current boat, feel free to substitute 1 pound of sweet potatoes, cubed. If you go the sweet potato route you'll roast them in a pan for 1 hour, at 350 degrees, and swap out red onions for yellow onions.

Ingredients

  • 1lb Jumbo Shrimp
  • Cumin
  • Dried Oregano
  • Southwest Chipotle Seasoning Blend (Target Market Pantry)
  • 1 1/2 cups Fresh Cilantro
  • Dry Cilantro
  • Garlic Salt
  • Black Pepper
  • Red Pepper Flakes
  • 2 15.5 oz Cans Black Beans (Drained)
  • 1 14.5 Can Chicken Broth
  • 1 Yellow Onion
  • 1 Green Bell Pepper
  • 5 Garlic Cloves
  • 1 Lemon
  • 2 Limes
  • 3 Cups Uncooked Brown Rice
  • 2 Avocados

Shrimp

1. Combine in a plastic bag:

  • 1/3 cup olive oil
  • 2 tbsp cumin
  • 2 tbsp oregano
  • 2 tbsp southwest chipotle blend (I like Target’s brand!)
  • 2 tbsp fresh cilantro
  • 1 tbsp dry cilantro
  • 1 tbsp garlic salt
  • 1 tbsp fresh ground black pepper
  • 1 tbsp red pepper flakes
  • 1lb jumbo shrimp
  • Juice from half of a lemon

2. Marinate for 2-3 hours

3. Sautee 3-5 mins each side until slightly charred

Beans

1. Sauté 2 tablespoons each, Garlic, Green Bell Pepper, and Onion for 5 mins in 3 tbsp of olive oil, sprinkled with garlic salt and black pepper

2. Add Beans and Chicken broth

3. Season to taste with Garlic Salt and Black Pepper

4. Add 1tbsp each, oregano, cumin, onion powder, garlic powder

5. Add 1tbsp Cumin

Salsa

1. Sauté 2 tablespoons each, Garlic, Green Bell Pepper, and Onion for 5 mins in 3 tbsp of olive oil

2. Add 1 Can sweet corn, drained, continue sautéing until slightly chard

3. Add 1 can Rotel tomatoes, drained, cook for 10 mins

Cilantro Lime Rice

1. Boil 3 Cups Brown Rice in 6 cups of water for 20 mins

2. Add juice from a half of a lemon and 1 lime

3. Boil for 20 more minutes or until water is completely absorbed

4. Add 1/2 cup chopped fresh cilantro

Suggested Assembly:

1. 1 cup Brown rice base

2. 1/4 cup Salsa

3. 1/4 cup beans

4. 6 shrimp

5. Half of an avocado

But you can wild out ;-)
